any of the "retriever" breeds work well. I have hunted over black labs, golden labs, golden retrievers and german shorthairs. The german shorthairs don't do well in water, my over all favorite is the golden retriever, mostly because it is such a family oriented dog, and does well at any type of bird hunting.
References :
Alot of people can just answer a question, but I can answer this question with many years of experience. I have owned both yellow labs and black labs and a golden retriever. All were fine hunting partners. But the golden seemed to be more mild mannered, easier to control and train and always listened to commands and NEVER got side tracked. With the labs, they were good dogs but had problems in all areas at certain times. The one major problem with a golden is the shedding of the long hair!! Although the labs shed it wasnt as noticable as the long hair all over left by the golden.
References :
any pointer, spaniel, or my personal favorite the nova scotia duck tolling retriever. clumber or springer spaniels are my choices in spaniel family. irish setters make good gun dogs and house pets also. research the breeds on akc.org to find out more. good luck.
References :
A lab or a golden retriever are your only real options if you want to shoot upland birds and ducks/geese. Springer Spaniels or a German shorthairs won't be good at diving into ice water to retrieve ducks. Thier coats are just not made to survive being cold and wet for hours on end, plus they are not really water dogs.
References :
Check out a Vizsla. They are super pointers, very smart, and great retrievers. Also good family dog but do require some space to run.
References :
I owned one for 14 years and hunted quail, dove, and ducks with her.

A lab is going to be your most versatile dog. HOWEVER, for the quail, you need to get a pointer of some sort. Labs just dont have the nose required. And the dog that you are going to use for Quail and pheasant is not going to be the same dog you use for the ducks. I dont think that you can use a dog for turkey. They would pick up on any movement and split real fast.
References :
coon dogs are excellent bird dogs. They are large sized though. Blood hounds are large sized as well but great hunters as well. But if you are looking for a small dog beagles are bird dogs as well
